Wow!! I have a lot of catching up to do!

I didn't realize it's been so long since I've blogged. Things have been absolutely insane here. This blog was meant to be a place to share recipes of food that I've cooked and loved, but I haven't really cooked since Phillip moved to Greensboro. We have a routine of switching who drives to see the other person on the weekends and it seems to be working out well except for the fact that Carter hates to ride. He screams, and I mean full out scream, for the last hour every single time. There's no calming him until he is taken out of his car seat. And don't even think about trying to stop and giving him a break. He just gets even madder that you've put him BACK INTO his car seat. Yowzers! Lil man has some lungs, that's for sure.
I've got sooo much catching up to do, I guess I'll have to do it over several days. Well, as I mentioned on one of my last posts, the last time I went home I got really really sick and was throwing up. So, Phillip kept Carter so I could travel back up to the mountains and get better. We met half way on Wednesday to bring Carter back, so I had 3 days to myself. It made me miss little man soooo bad! Geez! Thigns are very stressful when he's here, but I never imagined I could miss him and his sweet little smile so much. I got over the grossness and eventually decided to make the best of my last night without the baby and get a lot done. So, this is what I did Tuesday night:

68 cupcakes- some vanilla, some strawberry

Yup, that's right.... brownies for work, 68 cupcakes, and heart shaped rice crispies.... I was in heaven!! I miss cooking dinner and baking soooooo much! I don't have time to do it with Phillip gone, so I was living it up that night. I put the cupcakes in the freezer (the magic tip for having the most moist cakes you've ever had!!!) and iced them Friday night. I had Carter back that night, and it was extremely difficult to get anything done. Luckily, he was taking a nap for a good part of icing the cakes but there were 6 that hadn't been finished when he woke up and I was in a huge hurry to get them done. So, I did the best I could. I strapped lil man to my chest and started decorating. It was incredibly complicated because he kept reaching for the cupcake, so I had to hold it as far away from me as I could and pipe the icing on. Craziness!!~

They weren't **spectacular*** by any means, but they were delicious!



You know what I should've been working on? The house. You know why???......




Yup, our sweet little first home is on the market. It's soooooo sad. I really hate to say goodbye to our house. It's so perfect and it's really the best "first home" we could've ever found. The neighborhood is fantastic, the house is beautiful, it looks over the mountains, and it has so much potential downstairs to be an extra 2 bedrooms, bathroom, and playroom area. All of this stuff I had in my mind and planned out to do. The Realtor did a nice job of taking pics of the house and it's been sooooo hard keeping it spic-and-span every single night, when I would rather just go to bed. Well, this has been a looooong entry, so I'll have to finish catching you up at a later time.

What pretty cupcakes! It's a good thing that I don't eat that stuff anymore...too much temptation and it would take me forever to run all of that off.

So are you excited about moving to G'boro? It's a great city and we love living nearby and working there. The housing market is great too. See ya later!
