Nursery

I'm sooooo jazzed!! Phillip put together the crib Monday night and I put all the bedding on it to see how it looks. It's soooo cute!! I'm just thrilled! I'm not really sure why he wanted to put it together right now, especially with the big bed, desk, and book case that are still in there and need to come out. I guess we'll just have to dis-assemble it when his parents come to stay with us in August, and the sheets all need to be washed. But, for now, it's adorable!! There are two shots of the bed that are the same, but I lighted it up so you could see the crib better.

(Oh, by the way, we didn't notice it when we registered, but the animal that goes with the letter "Y" is a yak!!! I just love that and it cracks me up!!)

Shower pics

Here are pics from our baby shower. We had such a great time and were helped out by so many people. We are incredibly grateful for our family's support and love for Carter! We had a few of our big items given to us at this shower, along with finding and getting our crib over the weekend, so I definitely feel like we're rolling on along and making headway with the nursery. We got our car seat, an extra base, his mattress, and his video baby monitor (sweeeeeet~)!! I gotta get a pic of the diaper wreath my sister made for us, it's absolutely adorable!

Pictures

We had suuuuch a great time seeing Carter yesterday. The local community college is training students on how to use the machine, so we got about a full hour looking at him and measuring him. The great thing about it is that I didn't have to pay a crap load of money for it like I would if I had done it at my OB. I only had to pay $5 because I was volunteering for students to experiment and learn on me. It was really great and they did a great job. Unfortunately, the cd they burned for us has all the images in two forms: one- very very very tiny pic, or two- a video format of a still shot. So, it's not really conducive to putting it on a website. The first ones are the regular ultrasound machine, and then the others are the 3-d. It was awesome seeing him yawning, moving around, and sucking his thumb. He looks just like his daddy and has his nose for sure. I think the only thing he's gonna get from me is my big feet. His measured out to be 5 cm. I was going to post his pictures, but I need to see if Phillip can re-format the pics first. I tried to take pics of the pics like I have done in the past, but that just didn't work out. I'll post them as soon as I can! Thanks for checking in on us! I can't wait to come back and Monday and tell you about our first baby shower! I'm so excited!

3-d

We have our 3-D ultrasound today!! I'm so excited! Phillip was explaining to his dad yesterday how the machine worked, and again ended up referring to our child as "Ned Flanders looking..... you know that character from the Simpsons?" Yeah, I'm hoping the pictures turn out good today and he doesn't look so "Ned Flanders" this time around. If he does, I'm blaming it all on his genes. I'll post pics tomorrow :)

"Thank God I'm a country girl!"

Here's why I love being a southern girl:

You can go catch a fish, clean, and eat it, and completely relish in it... with no shame~!!! Phillip's dad caught Striper and sent some with us last time we were home. We finally got to cook it last night and it was soooooo good. We had potatoes and a fresh green pepper with it and I was in absolute hog heaven!

I got to work on the baby's room a little bit this weekend. I got the closet cleaned out and got to put the little bit of clothes for him that we have in there along with the awesome yard sale finds my mom has been coming across. I got totally freaked out because I realized how much we don't have for Carter. By this time I had hoped to fill his closet with clothes and diapers, but our financial situation is saying a big fat "no!" to that idea. Really, the stuff we have is hand me downs from our nephew that probably wont be the right season for the size they are. I'm suuuuuper stressed about it not being as well stocked as I want to be!! I'm looking forward to filling it up a little more this weekend after our baby shower..... I'M SO EXCITED!!!

Oh, and here's a little bitty sneak peak at Carter's first outfit :)

"Make toast... french toast!!!"

I made my first batch of french toast the other week. It turned out fabulously!!

Enjoy!!

French toast:
3 eggs
1/2 c. milk
2 tbsp. sugar
1/2 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
6 slices egg, french or sourdough bread sliced 3/4 inch thick
In medium bowl whisk together all ingredients. Pour over bread slice on a baking sheet, refrigerate overnight or at least 12 hours.

In skillet melt the butter, slowly fry bread over moderate heat until golden brown.

Garnish with sour cream and a sprinkling of pecans and dust with confectioners' sugar. Serve with cinnamon syrup.

3 day weekend

So, last week I worked 10's so that I could have Friday off w/o dipping into my maternity leave time. My boss was very kind about it, but still, not thrilled about the whole thing, but was still gracious enough to do it. So, we celebrated Phillip's birthday Thursday night and had a bunch of friends over until late that night, and got to sleep in the next day. I haven't slept til 10:00 in a loooong time, and it was FANTASTIC!! But, let me go back to Phillip's birthday real quick. We had such a great meal. We had Tikha chicken, basmati rice, naan, curry potatoes, and some kind of pea/mushroom Indian concoction. I served a nice veggie tray as an appetizer (not Indian at all), and then Phillip's favorite cake (boxed yellow cake with chocolate icing) with strawberries for dessert. I gotta say, that was the best boxed cake I have ever made!! I tried to jazz it up by making my first homemade chocolate icing (I've made other homemade icing, but not chocolate) and it was quite the under taking. I found a Martha Stewart recipe, and thought for sure it had to be good! I made the first batch with too much butter, so I made two more batches (both of which burned), and then finally balanced out the first batch with the fourth try. It was very delicious, if you weren't looking for a milk chocolate kind of taste. It was made with unsweetened baking chocolates, and it would have been good on the strawberries, but not exactly what I wanted on a cake. I would definitely say to use it if you don't like milk chocolate. Here's the recipe:

  • 1/2 cup plus 2 tablespoons sugar
  • 1/2 cup heavy cream
  • 2 1/2 ounces unsweetened chocolate, chopped
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon pure vanilla extract

Directions

  1. Place sugar and cream in a heavy-bottomed saucepan; bring to a boil over high heat, stirring constantly. Reduce heat to medium and simmer, without stirring, about 5 minutes.
  2. Remove saucepan from heat and stir in chocolate until melted. Stir in butter and vanilla until well combined. Chill, stirring occasionally, until cooled completely.

Anyway, we got to sleep in on Friday, and then went to Asheville to pick up my car from the dealer after a part had been recalled, and then went to watch the new Batman movie. It totally rocks by the way!! It's awesome! It's definitely supported by the little pitter-patter I've had in my heart for Christian Bale since his "Newsies" days :) Saturday was spent at the lake and lounging around. Afterwards, Phillip invited Colby and Richie (good friends of ours) for some good guy-time movie watching. I sat through a "Futurerama Movie", and then "The Golden Compass" (Lord help me!). Sunday was spent on the couch and sleeping with the dog. Speaking of the dog, we took her to the lake for the first time Saturday. I figured she would be ok, but not so much. She can swim, but only if she has to. Poor thing, once her feet dropped out from under her she was done. She wouldn't swim anymore. So, she perched her little self on top of my baby-bump and sailed around the lake with me and my noodles quite comfortably.

She doesn't ever stay still for the camera!

Excuse my fatness in these pics. I am just starting to see how much of a massive beast I am these days. Time to really have an expectant mommy cut-back on the intake . Other than that we had a great weekend! Gotta get back to work!
